Banner 9-11%   Similar to Aquila and Cluster with good yield.  
Crystal 3-4% 5-7% Bred to replace imported noble hops. Has a Hallertauer character with a nice, floral aroma and flavor. very poor
Elsasser <2%   An old French hop with low yields.  
Golding 4-6%   Mild, pleasant flavor. U.S. grown version of the English classic. good
Hallertauer 3-6% 4-5% Traditional German hop from Hallertau region. Pleasant herbal character with an excellent bittering and flavoring profile. excellent
Hallertauer
Mittelfrüher
4-5% 4-6% German variety of noble-type. Being replaced by newer varieties. poor
Hersbrucker 2-5% 6-7% Drier, spicier than Hallertauer. Most important aroma variety in Germany. good
Kent Golding 4-7% 2-4% Flowery aroma has characterized some of the best English bitters. very poor
Liberty 3-6% 3-4% Somewhat floral and fruity. Similar to Mt. Hood. Triploid cross of Hallertauer Mittlefrüher only with no farnesene in oil. poor
Lublin/Lubelski 3-5% 2-4% Refined spicy flavor. Polish hop with Saaz ancestry. very poor
Mt. Hood 3-5% 5-8% Aroma is mild and clean with Hersbrucker similarities. Bred as a domestic substitute for Hallertauer Mittelfrüh. very poor
Saaz 3-5% 3-4% A pleasant flavor and perfumey aroma, well suited for use in your finest Pilsners & Lagers.Commerical example: Pilsner Urquell. very poor
Spalter 3-6% 4-6% Traditional German noble hop. good
Spalter Select 3-6%   Hallertauer like aroma. Replacement for traditional Spalter. good
Strisselspalt 3-4%   French variety related to Hallertauer. fair
Styrian Golding 4-6% 2-3% A nice bittering hop with slightly spicy flavor and aroma characteristics. Genetically the same or little different from Fuggle. fair
Tettnanger 3-5% 3-4% Spicier that Hallertauer. Its rich flavor and flowery nose make it a versatile and favorite lager hop. One of the original "noble" hops originally from the Tettnang region of Germany. fair
Ultra 2-3%   Newer domestic aroma variety with Saaz characteristics. Bred as a substitute for Hallertauer Mittelfrüh. fair

Boor 7-9%   New Czech type. Northern Brewer/Saaz ancestry.  
Bramling Cross 5-8%   Variety Bramling crossed with a male seedling from a Manitoba female. Blackcurrant, lemony aroma. fair
Brewer's Gold 6-9% 3-5% Sibling of and similar to Bullion only maturing earlier and more disease resistant. English/wild Canadian cross. Pungent English character. very poor
Bullion 6-9% 3-5% Old English variety, similar to Brewer's Gold.  
Cascade 4-6% 5-7% Probably the most popular hop. Fuggle and Russian hop (Serebrianker) cross. An hop with a distinct, spicy, floral nose and citrusy flavor. Commercial examples include: Anchor Liberty. very poor
Centennial 9-11% 4-5% Strong, rich, fragrant, spicy Cascade-like aroma, as well as for bittering, medium to high bittering. Not as citric in aroma as Cascade. Floral notes depending on boil time. good
Cluster 6-9% 5-6% Oldest U.S. variety and once dominant. Spicy aroma and clean bitterness. very good
Columbia 5-6%   Sibling of Willamette, triploid with a Fuggle parent. Often substituted for Fuggle.  
Eastwell Golding 5-7%   Closely represents other types of English Goldings.  
First Gold 6-9%   Dwarf hop with fine English Golding character. very good
Fuggle 4-5% 2-3% Pleasant bittering and a slightly fruity flavor & aroma make this one of the worlds most popular and versatile Ale hops. poor
New Zealand Hallertauer 8-9%   A Hallertau aroma with an ability to retain its clean taste. A triploid Hallertau bred from the German Hallertauer Mittelfrüher.  
Northern Brewer 7-9% 3-5% Contributes a solid bittering and rich hop flavor to Ales and Lagers. Bred from a cross between Goldings and Brewers Gold. Aka Hallertau Northern Brewer. Commercial Example: Anchor Steam. good
Orion 6-8%   Dual use hop from Germany. good
Pacific Gem 11-12%   A high alpha hop with a pleasant aroma.  
Perle 5-8% 4-5% Replacement to Hallertauer Mittelfrüher. Orignally from Germany. Minty bitternes and pleasant aroma. good
Phoenix 8-12%   Attractive English aroma with high alpha-acid. excellent
Pioneer 8-10%   New dwarf variety with clean bitterness and mild English aroma. good
Pride of Ringwood 7-10% 5-7% Rough and spicy English character. Tasmaian wild/English cross. very poor
Progress 5-8%   Simular to Fuggles but a little sweeter. aka UK Progress and Wye Progress. Bred from Whitbred Goldings Vareity but with a better aroma. Used as a substitute for Goldings and Fuggles. good
Saxon 6-7%   English hop released to meet the need for a higher alpha-acid hop. No longer grown.  
Sladek 9-10%   New dual purpose Czech hop with some Saaz characteristics. good
Talisman 7-9%   An improved Cluster variety.  
Whitbread Golding Variety

5-8%   Traditional English hop with a sweet and fruity aroma. fair
Willamette 4-6% 3-4% Nice bittering with a light, fruity flavor & aroma. An extremely versatile hop. A seedless version of English Fuggle with similar charactersitics but with a spicy aroma. fair
Wye Challenger 6-9%   Fruity aroma. Bred from Northern Brewer. Aka U.K Challenger. good
Wye Northdown 7-10%   Mellow English higher alpha-acid hop fair

Eroica 9-12% 4-5% Very pungent English flavor. Brewers Gold ancestry. poor
Galena 11-14% 7-9% Pungent English flavor. A selection from seedlings of Brewer's Gold with 50% higher alpha acid content. Described by some as the most mellow of the high alpha acid varieties. fair
Green Bullet 9-11%   High-alpha acid variety from New Zealand.  
Hallertauer Magnum 10-13% 3% High-alpha acid variety with German taste characteristics. very good
Herald 11-13%   New high-alpha acid dwarf. very good
Nugget 9-13% 4-6% High-alpha acid with a heavy herbal aroma.Orignally bred from Brewer's Gold. good
Olympic 11-13%   Moderate aroma. Similar to Chinook.  
Sticklbract 9-11%   Coarse, high-alpha acid variety from New Zealand.  
Taurus 12-15%   Ultra high-alpha acid with German characteristics. poor
Wye Target 10-12% 4-6% Neutral high-alpha. Bred from Northern Brewer crossed with some Goldenings. Used for hopped malt extract and many English Ales. very poor
